Flour Type "2" - Grani Antichi

Grani Antichi (Ancient Grains) is a soft wheat flour type “2” , stone-milled and made from a blend of varieties of national antique grains: Verna, Autonomia, Abbondanza e Frassineto. It has much lower rheological characteristics than other flours and has a lower protein content. It is suitable for all types of productions and is particularly suitable for doughs requiring medium to short leavening or a very slow and extremely accurate process. It is advisable to use little quantity of beer yeast and process with medium-short fermentations.
